Recipe: Mini Quiches
Ingredients:
puff pastry
chicken
garlic
onions
tomatoes
baby spinach
cheese
egg
milk
butter
chilli / pepper (optional)
chicken stock powder and/or fresh herbs for flavour
Method:
Fry the garlic, butter, chilli, onion and diced chicken in a frypan. when chicken is cooked through, add diced tomatoes, or halved charry tomatoes and baby spinach, fry 2 mins, then add any other left over vegies. ( I often use leaks or shallots from the garden when in season ) Once spinach is wilted add fresh herbs and/or 1-2 tsp chicken stock powder, cup of milk, handful grated cheese + 3 eggs to pan, stir on low heat. Season. Grease then Line muffin trays with puff pastry. Add spoonful of mixture to the puff pastry in the muffin trays. Sprinkle tops with cheese. Then cook for 15- 20 mins in moderate oven, or until quiches are firm and golden brown, take out and cool on rack. Are amazing warm with a little salad, and great to take to lunch the next day.
