Recipe: Mulberry Pie
Ingredients:
Ingredients for Pastry:
1 1/4 cups Wholemeal plain flour
1/2 cup cold butter
2 tblspns sugar
1 egg
1 tblspn cold water
1/2 teasp salt
Ingredients for Filling:
3 cups of freshly-picked mulberries - stalks picked off
1/4 - 1/2 cup sugar (depending on taste).
1 cup water
2 -3 Tblspns cornflour
Extra 1/4 cup of room temperature water
Method:
Combine butter and sugar in a food processor and process for two minutes until smooth. Add egg, water and salt and process and additional two minutes until smooth. Add the flour and continue to process until a neat ball is formed. Remove dough from food processor and cover with plastic wrap. Let rest in refrigerator for at least and hour before using. After an hour of chilling, remove pastry from the fridge, roll out and place in greased pie flan. Bake until golden brown, then cool.
Put mulberries and water in saucepan and bring to boil. Cook mulberries for a further few minutes until they look as if they are cooked. Add cornflour to the extra water and dissolve. Pour cornflour mixture into the mulberry mixture and it should immediately thicken. You may not need all the cornflour mixture. Use your judgement to judge the thickness and if need be, do not add all the cornflour. Cook mixture for a further few minutes. Pour slightly cooled mixture into pie flan and refrigerate. This pie is delicious with whipped cream or ice cream.
