Recipe: Salmon Sandwiches Weekend Special
Ingredients:
From the garden:
8 cherry tomatoes
parsley, garlic chives, chive flowers
2 kaffir lime leaves
From the pantry/fridge:
large can of salmon
olive oil
good quality mayonnaise
sweet chilli sauce (optional)
loaf of bread
Method:
1. Potter around in the vege garden in the morning, then bring in the harvest. 2. Empty a drained can of salmon into a large mixing bowl. Give the excess salmon oil to the dog (He'll love it!) 3. Finely chop the kaffir leaves, garlic chives and parsley, then add to bowl, along with tomatoes cut in quarters. 4. Sprinkle in the chopped spring onions and petals from the chive flowers. 5. Add mayonnaise, along with 1 tablespoon of olive oil. 6. Mix with a fork until the ingredients are well blended then season with pepper to taste. (Sweet chilli sauce is optional). Adjust with mayonnaise or olive oil for taste and moist texture if required. 7. Load generous helpings of mixture onto sandwiches, then cut into triangles. 8. Sit on the balcony and eat your harvest with family.
