Recipe: Golden Egg Curry


Ingredients:

This is delicious served on a bed of white or brown rice
8 eggs
1 400 gram can chopped tomatoes
25 g ghee or olive oil
1 onion finely chopped
1 garlic clove finely chopped
400ml coconut milk
1 teaspoon ground tumeric
1/4 - 1/2 teaspoon cayenne pepper
12 or more curry leaves


Method:

Put your rice on to cook. Put the eggs in a saucepan of water and hardboil, cool, peel and set aside. Melt the oil or ghee in a heavy based frypan or saucepan over medium heat, fry half the curry leaves until they pop and brown a bit, put aside to add later. Turn heat down and add onion and garlic and cook until soft and golden. Add the tomato and stir in the coconut milk, then the tumeric and cayenne and season with a little salt. Add the cooked curry leaves. Bring to boil then simmer to reduce the sauce for about 3 minutes. Add the eggs and heat gently . Serve over the rice and garnish with the left over curry leaves.
