The fruit or vegetable grown is:
lettuce, carrot, broad beans, snow peas, tomatoes, potatoes, parsnip, garlic, onion, silverbeet etc
Recipe: Summer Salad
Ingredients:
500g mixure of homegrown lettuce, spinach, beetroot leaves & snow peas
6 rashers of short cut trimmed bacon
4 eggs
Small container of antipasto mixture (containing mixed olives, semi sun dried tomatoes, peppers, egg plant and artichoke)
Cheese or haloumi to taste
White wine vinegar to taste
Feeds 4
Method:
Pick and wash lettuce, spinach, beetroot leaves & snow peas. Place in a large bowl. Cut the bacon into strips and fry until crisp. Mix cooked bacon with the antipasto mix and place on top of leaves. Sprinkle with cheese/haloumi and white wine vinegar to taste. Serve into individual bowls. Fry eggs, leaving the yolk runny. Serve on top of salad. Delicious as a light summer meal.
