Zuchinni
Recipe: Zuchinni and Parmesan slice
Ingredients:
500g zucchini, washed, grated and squeezed dry
3 large potatoes grated and washed, then squeezed dry
150g parmesan cheese – good quality
1 large Spanish onion, sliced and cooked
8 eggs (lightly beaten)
5 shallots chopped
1/2 bunch parsley chopped
salt (optional) and pepper to taste
2 tips • Squeeze the zuchinni and potato very dry • Watch the salt because the parmesan is very salty
Method:
Zucchini and Parmesan Slice My Daddy makes this the best. This recipe is so easy! Just mix everything and bake. It’s also one where you can hide lots more vegetables if you want. Bacon is also a great addition. Here’s my gluten free recipe to share.
