Greek Basil
Recipe: Pesto Pasta
Ingredients:
big bunch of basil
50g ground macadamia nuts
1 clove crushed garlic
4 tbsp or so of extra virgin olive oil
pepper
freshly grated parmesan cheese
Pasta of your choice
Method:
Put basil, nuts and garlic in a mortar and pestle and crush to a paste. Add olive oil and season with pepper if desired. Add grated parmesan as you serve with hot, cooked pasta. NB: Pesto (without parmesan) will keep in the fridge for several weeks, seal sterile jars with extra olive oil to improve longevity.
